One of the things that I “missed” initially when transitioning to eating a real, whole foods diet (aka Paleo- more on that in future posts) is was what I call Cosco/grocery store/airport-style luncheon wraps. You know, the ones that are at every school function, baby shower, and work meeting with the sandwich fixings or other flavor combos wrapped up in a tortilla? Yeah those. They are delicious. Those little tasty wraps are easy and inexpensive to make, pack a lot of flavor in every bite, and are great on the go. And they make for pretty clean eating (assuming they’re made with quality ingredients), with the exception of the tortilla.
At the time, all of the gluten free, non corn tortillas on the market (or at least known to me) weren’t scratching the tastebud itch for the grocery store version. Enter scene discovering Siete Foods tortillas a few years later. Ho-ly cow! My habit of still mowing down Cosco/grocery store/airport bought wraps on the regular was alleviated. I now had a grain free, paleo, non GMO, vegan, gluten free, dairy free, soy free option, AND delicious option for tortrillas.
I came up with these Mediterranean inspired turkey wrap by accident. I had made a Greek lamb dish earlier in the week and I had some leftovers that were about to go bad. That’s a very common theme for recipe/meal creation for me btw: not wanting to waste food and getting creative with leftovers! I had also just started buying Siete Torillas and remembered I had some in the freezer. Thus these Mediterranean Turkey Wraps were born. Made with all real food fixings, the freshness of the Mediterranean salad, combined with the creaminess of the cream cheese, and saltiness of the turkey deli meat is so so so good! And you’re likely to have most of the ingredients on-hand at home.
Measurements and quantities are purposely not included in this receipt because making these should be simple. Want more cucumber flavor? Add more cucumber. Hate red onion? Leave it out! Making only enough for one sitting? Don’t add 10 tomatoes. You get the idea; use your noggin. I know these delicious bad boys will work their way into your weekly meal rotation; they’re that good. To make the Mediterranean salad, in a food processor (or diced by had if you’re brave or don’t have a food processor), chop red onion, tomato, and cucumber. Add in feta crumbles and S & P. Drain any moisture produced.
Warm tortilla for 15 seconds in the microwave to soften. Spread cream cheese and lay lunch meat of choice. Top with Meditterranean salad.
Roll tightly into wraps and slice in the center at a diagonal for easier eating.
